Butterfly Watermelon Cake

So, here it is. My first blog post!! I wanted to keep it short and sweet while I get to grips with using a new form of technology ( any form of technology usually scares me so this a big deal , applause please!).

I decided to share the wonderful refreshing ‘cake’ I made for Coppertop’s 1st birthday ( how is it possible that was 2 years ago,HOW?!) made completely from fresh fruit and a little imagination. It was ridiculously hot here in Ireland that July and this was just what we needed, especially with a teething baby who loved sucking on frozen watermelon cubes to help her gums

Butterfly Watermelon Cake

All you need to do is cut the ends off a watermelon, slice off the rind and cut into a cylinder. Cut cylinder in half and place curved sides against each other , cut out butterfly wings. Use toothpicks to secure blueberries and kiwi slices in place. Set on a bed of romaine lettuce leaves.Done!! Serve to grateful overheated family.
