Oooooh blackcurrant how I love thee. Oh lavender how I also love thee. To combine the two into a delicious light cordial?!! Glorious!! But more on that in a little bit…Firstly, my humble apologies for being so absent, between the house move, new business and some heartache, I wasn’t left with much time or energy to put into this site but hopefully we’re now finding our new rhythm enough to let me sneak some time on here with you guys! I have a huge backlog of posts to share all our new adventures since moving to the countryside which has been one of the best decisions I’ve ever made… last week Coppertop and I walked past the fields into the next village collecting blackberries on our way. A lady walking the opposite direction saw her basket full of blackberries and invited us in to her garden to pick more! Well. We ended up with not only blackberries but a full tub of blackcurrants, lots of rhubarb (made into a gorgeous crumble) and swathes of freshly cut lavender! What a wonderful chance encounter that led to a new friendship and even better, she’s a veggie too!! Was meant to be. ūüôā

Just me then…….. well anyway, these last minute pancakes turned out to be sooooo incredible that I’m being a terrible mother and delaying our trip to the park just to get this written up before Pancake Tuesday lol. Comfort food. It takes all shapes and forms. For some it’s ice cream (non-dairy of course), pasta for others. Could be a single square of dark chocolate for some people ( though if you ARE one of those people, please make yourself known so I can learn moderation from you!). For me, I’m not sure anything truly beats a huge plate of creamy filling risotto. The combination of soupy rice that still has a little bite to it, with richly flavoured stock, vibrant veggies and the sharp tang of Parmesan…. except, no parmesan now. You can get vegan parmesan but it costs a fortune and I’m not quite ready to sell a kidney for an alternative.¬†Luckily, that creamy piquant flavour was easily replicated by adding apple cider vinegar, nutritional yeast¬†and Dijon mustard to the blended up butternut squash mixture, didn’t even miss the parmesan cheese!

I can’t tell you how long I searched for the perfect harira. Well, actually I probably can. About a year and a half, countless recipes, many gorgeous soups guzzled down but they were never quite like the one I’d tried a year and a half ago in a veggie caf√© on a day out.
