Oooooh blackcurrant how I love thee. Oh lavender how I also love thee. To combine the two into a delicious light cordial?!! Glorious!! But more on that in a little bit…Firstly, my humble apologies for being so absent, between the house move, new business and some heartache, I wasn’t left with much time or energy to put into this site but hopefully we’re now finding our new rhythm enough to let me sneak some time on here with you guys! I have a huge backlog of posts to share all our new adventures since moving to the countryside which has been one of the best decisions I’ve ever made… last week Coppertop and I walked past the fields into the next village collecting blackberries on our way. A lady walking the opposite direction saw her basket full of blackberries and invited us in to her garden to pick more! Well. We ended up with not only blackberries but a full tub of blackcurrants, lots of rhubarb (made into a gorgeous crumble) and swathes of freshly cut lavender! What a wonderful chance encounter that led to a new friendship and even better, she’s a veggie too!! Was meant to be. 🙂
You know when you make something so perfect you actually want to cry? No? Just me then…….. well anyway, these last minute pancakes turned out to be sooooo incredible that I’m being a terrible mother and delaying our trip to the park just to get this written up before Pancake Tuesday lol. You’re welcome. Fluffy, thick, tasty, coconutty, banana-y……… I can’t believe just how good these turned out!! Anyone who follows my Instagram knows how much I adore pancakes ( and if you don’t follow me, why on earth not?!) but sometimes trying to get the texture of vegan pancakes right just doesn’t seem to happen. Comfort food. It takes all shapes and forms. For some it’s ice cream (non-dairy of course), pasta for others. Could be a single square of dark chocolate for some people ( though if you ARE one of those people, please make yourself known so I can learn moderation from you!). For me, I’m not sure anything truly beats a huge plate of creamy filling risotto. The combination of soupy rice that still has a little bite to it, with richly flavoured stock, vibrant veggies and the sharp tang of Parmesan…. except, no parmesan now. You can get vegan parmesan but it costs a fortune and I’m not quite ready to sell a kidney for an alternative. Luckily, that creamy piquant flavour was easily replicated by adding apple cider vinegar, nutritional yeast and Dijon mustard to the blended up butternut squash mixture, didn’t even miss the parmesan cheese!
I can’t tell you how long I searched for the perfect harira. Well, actually I probably can. About a year and a half, countless recipes, many gorgeous soups guzzled down but they were never quite like the one I’d tried a year and a half ago in a veggie café on a day out. I’m not usually a fan of tomato base soup but I’m a huge lover of Moroccan cuisine in general. The earthy ,smoky, sweet spices, the use of chickpeas in nearly everything, the slight warmth on the palate without tear inducing heat…….. so when I tried this richly spiced soup with tons of vegetables, a little kick to it and of course, our family favourite chickpeas, I was immediately in love Continue reading →
We all have our tried and trusted recipes that don’t require much thought, always hit the spot and can be hard to remember the exact amounts that go into the pot. This is one of my top ones. Thanks to a chance decision to buy soup in a juice bar across from the health food store I worked in, in St Andrews, Scotland, I discovered the joy of adding mint to what is a fairly common soup dish. The mint really gave the soup an added depth and ‘zing’ to it, especially welcome as I needed some comfort food that day Continue reading →
Chocolate mousse. Decadent. Rich yet light and airy. Bubbly yet smooth and melt in your mouth indulgence. Made from the drained liquid in a tin of chickpeas..wait, what?! Yup. Welcome to the magical world of aquafaba. The glorious vegan revolutionary ingredient that I’d been throwing down the sink for years! For anyone that’s missed the hype the past year about chickpea brine, basically Continue reading →
Autumn. The crisp cool air. Kicking leaves. Open fires. Hot chocolate. Halloween. Warming spices. Soups and stews while snuggled inside listening to the rain hammering off the windows (ok so here in Ireland that could just as easily be July but I digress). I adore it. I always get renewed energy at this time of year and have so much fun finding recipes to use up the fresh seasonal produce. Every year I seem to end up with a glut of apples that cry out for some creative cooking other than the standby crumble, pie and cider. Continue reading →
This is one of those times that I kick myself and think ” WHY have I never done this before?!” Frugal. Quick. So unbelievably moreish I’m not sure I should share in case you all shout at me for getting you addicted. But I’m going to share anyway, they’re too good not to!
Potato peeling crisps. Why. Why has it taken me 33 years to discover these? They make perfect sense. Making something tasty ( though not exactly healthy) out of scraps that would normally be composted. A quick snack that satisfies a craving for cheese and onion flavour crisps ( chips for my American friends) without buying processed expensive junk. Continue reading →
I’m a huge fan of natural toiletries , especially frugal (vegan of course) homemade ones. See why here. But I also want them to be effective and special. This coconut oil lemon sugar scrub ticks all the boxes. It’s refreshing, luxurious, sloughs off dead skin yet moisturises beautifully leaving skin glowing and smelling heavenly. Though it does always leave me craving lemon squares. Continue reading →
I’m a diehard vegan foodie. I could talk about, make and eat (lots of) gorgeous vegan food all day everyday. My idea of a fun evening is curled up pouring over recipe books, making lists and menu plans to try and incorporate my experiments into our weekly budget. After all, what is life without some cruelty-free chocolate mousse or homemade pepperoni seitan vegan pizza?
Sometimes life throws curveballs and the budget gets stripped back to the bare bones or you don’t have time to indulge in fancy schmancy recipes due to higher priorities. That’s where it’s time to REALLY get inventive Continue reading →
