Hiiiiiiiiiiiiiii everyone!!! Yes, I’m still running a blog and haven’t forgotten about it! I took a break over the seasonal period to spend with my nearest and dearest then couldn’t seem to get over blank page syndrome :/ so here is a nice easy recipe to kick things off as I have quite a few posts lined up 🙂 Bliss balls. Energy bites. Little spheres of yummy goodness… whatever your name for these , most of you will be familiar with them. I love these little guys and so does Coppertop, perfect healthy afternoon snack or breakfast option that take no time at all to put together and you don’t even need a food processor for this version. They taste almost more like orange cranberry cookie dough balls but they’re packed full of fibre and slow releasing energy from the oats, Omegas from the hemp seeds and protein from the nut butter.
I also love that most of the work was done by Coppertop. These are a great option for some quality ‘cooking’ time with little ones, I know that in this house she adores helping out with the cooking in any way that she can, so these bliss balls are ideal. Sometimes it can be hard to try and make then photograph dishes during the day while making sure Coppertop isn’t ignored lol,it can’t always coincide with one of the points that she’s happily playing by herself! So I try and make sure she’s part of the process as much as possible, which makes it fun for both of us and we love it that way. Apart from a few minor heart attacks after setting up the photo and suddenly a little hand decides to ‘help’ just as I’m about to click the camera…anyway, enough of my wittering today, on to the recipe! ORANGE CRANBERRY BLISS BALLS
Ingredients
- 1 cup of oat flour ( or finely milled oats)
- 1/4 cup of shelled hemp seeds
- 1/2 tsp cinnamon
- 1/2 tsp vanilla powder
- 1/2 cup (packed) nut or seed butter, I used natural peanut butter this time
- 4 tbsp maple syrup
- 2 tbsp coconut oil,melted
- 1/4 cup dried cranberries
- 1 tbsp orange zest
- dessicated coconut
Method
Stir together the oat flour, hemp seeds, cinnamon and vanilla powder in a large bowl. Add the nut butter, maple syrup and coconut oil then stir thoroughly to combine. Once smooth, add the cranberries and orange zest. Roll into balls ( the mixture will be quite sticky). To finish, roll the balls in the coconut (Coppertop’s favourite part!) then put in the fridge to firm up for at least an hour.
