Crispy, fluffy and super simple!!
SLOW COOKER roast potatoes?!! I know what you’re thinking…. how could something known for producing tender, soft slow cooked meals like casseroles and stews manage to make potatoes that are truly crispy on the outside but fluffy on the inside?!! Well I’m here to tell you that it really is possible and a total game changer for me. Thanks to having a broken oven for 2 weeks and wanting to make my daughter’s favourite food (mama’s roast potatoes), I had to try a different approach! Flavoursome crispy roasties that are a perfect accompaniment for any dinner (or for those of us who could happily eat a plate of them by themselves!) How do you perform such magic, you ask?! Wonder no longer…
SLOW COOKER ROAST POTATOES RECIPE
Ingredients
- Maris Piper / Navan potatoes, enough to cover the base of your slow cooker
- 1/4 cup of mild light olive oil
- 1 tablespoon of plain flour
- dried sage
- onion granules
- salt and pepper
Method
Peel potatoes and cut into evenly sized chunks. Parboil potatoes for 10 minutes then leave to dry out and cool a little in a colander. Add olive oil to slow cooker and set to high, so the oil is nice and hot. When the potatoes have cooled a little, add your flour and seasonings ( I use roughly 1/2 tablespoon each of the onion granules and sage) and mix around in the colander to rough the edges slightly and coat the potatoes.
Add your potatoes to the slow cooker, tossing in the hot oil (it should sizzle when you add the potatoes). When they are covered in the oil, place a teatowel across the top of the slow cooker and then place the lid back on top. The teatowel helps absorb any condensation and keeps your potatoes dry and crispy! Cook the potatoes on high for 3 and 1/2 to 4 hours , turning twice in between to crisp up all the edges. And that’s it!! So simple, but so handy, especially for the likes of Christmas Day when oven space may be tight or when you’re just wanting a potato dish that takes care of itself.
*note – only use enough potatoes to cover the base of your slow cooker, if you try to pile them up, they will steam cook rather than go crispy
